This work provides an up-to-date overview of scientific progress in many areas of hygiene quality of food products of animal origin. This work contains the complete papers of the six keynote speakers, the abstracts of all 80 invited speakers and many abstracts of the poster presentations. Healthy animals, healthy food and healthy consumers, and the interactions between them were main topics at this meeting. Subjects covered range from animal production and health care, processing products of animal origin, such as chilling and packaging, to the consumption of those products.
