This work approaches the study of nutrition and diet therapy from the personal and professional perspective of nursing students. The text emphasizes the role of nursing in health promotion and primary prevention as well as in illness. Nursing content continues to be integrated in this second edition, including many new topics such as telenursing. Furthermore, the nursing process is integrated into every chapter, most notably in the "The Nursing Role" box at the end of each chapter. The book includes an appendix that presents cultural dietary patterns of different ethnic groups, allowing nurses to focus on the specific populations with whom they work.
