環境教育の基本的テーマである「自然と人間のつながりへの気づき」を促す手がかりのひとつとして、「自然資源としての有用微生物と人間の食生活とのつながり」を取り上げた。現在、自然界に存在する酵母を探し、そのはたらきを利用してパンをつくる活動教材の開発を目指して研究に取り組んでいる。
