本辞典では、食品を中心に据えて用語を選択し、疾病に関する事項では、育児用食品や一部の生活習慣病などに関連する事項を取り入れることにし、栄養に関する事項も基礎的なものは採録した。また、バイオテクノロジーに関する事項はその性格上、食品への応用が将来も問題になると予測されるために、できるだけ広く取り入れた。
